It’s always nice to have a quick and easy meal for those busy and/or lazy days. Once Upon A Time, I would just pop a frozen pizza from the grocery store into the oven and that was that. However, a combination of absurdly-expensive frozen pizzas (that are also way small for the price) and my desire to eat more Real Food has led me to start making my own pizza

Making my own pizza has ended up being not only a perfect meal for busy/lazy days, but also a great way to connect with my husband over food. We have started a lovely tradition where we both choose toppings for our homemade pizza and we also make it together. Let’s face it: everyone likes different toppings on their pizza. My husband and I have found that making pizza together helps us chat about our days while compromising on toppings. The results are that we not only have lots of fun making our dinner together, but we also come up with some fun, creative pizza recipes.

One pizza invention we started making and loving was this one: a Goat Cheese Arugula Pizza. It combines the tartness of homemade pesto (check out this post for pesto recipe ideas) with the bitterness of arugula (you can easily grow your own) and the sweet/creamy taste of goat cheese. I love recipes that balance different types of tastes.

Goat Cheese Arugula Pizza
Where bitter arugula meets creamy goat cheese and tart pesto to make a heavenly pizza recipe.

Ingredients
  1. *Pizza crust (your choice, or check out the options mentioned in the notes)
  2. *6-8 tbsp. ​pesto
  3. *3 roma tomatoes, seeded and diced
  4. *5-7 oz. goat cheese, big globs of it
  5. *1 cup of ​arugula
  6. *4-6 mushrooms, diced
  7. *1-2 cloves garlic, crushed or minced
  8. *1/4 - 1/2 cup of mozzarella shredded cheese, (optional)
  9. *grated parmesan for topping, (optional)
Instructions
  1. Make Pizza crust according to directions.
  2. Add pesto sauce and cover bottom of pizza crust.
  3. Add the toppings: tomatoes, goat cheese, mushrooms, garlic, moz. cheese (optional) and parmesan (optional)
  4. Bake pizza according to directions on the box or crust recipe, until there is 1-2 minutes left for cooking. Take it out and add the arugula. Bake until complete.
  5. Enjoy!
Notes

  2. **The bigger the globs of goat cheese, the better tasting the pizza! I actually tried to slice the goat cheese, which is difficult due to its' soft texture, but the resulting globs were big and I put those on the pizza. It is delicious this way.
  3. **I added a tiny amount of moz. cheese to make my pizza have that melted-cheese look. If you don't care about appearances, then you probably don't need the moz. cheese added.
  4. **Add the arugula later in the pizza process to avoid a burned-arugula taste.
